Whey protéine, c'est quoi ?
La whey protéine (ou « protéine de lactosérum ») est la fraction protéique du petit-lait, ce liquide qui se sépare du lait lors de la fabrication du fromage. Longtemps jetée, c'est aujourd'hui la protéine en poudre la plus utilisée en musculation, pour une raison simple : elle est rapidement assimilée et très riche en acides aminés essentiels.
Le petit-lait est filtré puis séché pour concentrer les protéines. Selon le degré de filtration, on obtient une poudre contenant de 70 % à plus de 90 % de protéines, avec peu de glucides et de lipides.
Composition et valeur nutritionnelle
La valeur d'une protéine se juge à son profil en acides aminés. La whey contient les neuf acides aminés essentiels et se distingue par sa richesse en leucine (l'acide aminé qui déclenche le plus fortement la synthèse musculaire) et en BCAA.
Sa valeur biologique est parmi les plus élevées : le corps l'utilise très efficacement. Une dose de 25 à 30 g apporte en général 20 à 24 g de protéines et 2 à 3 g de leucine, de quoi stimuler pleinement la construction musculaire.
Les bienfaits de la whey (ce que dit la science)
Les bénéfices de la whey ne relèvent pas du marketing, ils sont documentés. La position officielle de l'International Society of Sports Nutrition conclut qu'une supplémentation en protéines est efficace et sûre pour soutenir la prise de masse et la force chez le sportif1.
Une méta-analyse de référence a montré que les gains musculaires augmentent avec l'apport en protéines jusqu'à environ 1,6 g par kilo de poids de corps et par jour2 ; au-delà, le bénéfice devient marginal. La whey sert surtout à atteindre ce total quand l'alimentation seule n'y suffit pas.
Autres atouts : une récupération facilitée après l'effort et un fort pouvoir rassasiant, précieux en période de sèche.
Comment bien choisir sa whey ?
Trois critères priment : la qualité et la traçabilité de la source (une native ou une isolate traçable), la teneur réelle en protéines par dose, et une liste d'ingrédients courte (méfiez-vous des additifs superflus). Bon réflexe : comparer le prix au kilo de protéines, pas le prix affiché.

Quand et comment la prendre ?
L'essentiel n'est pas le timing, mais votre total de protéines sur la journée (environ 1,6 g/kg chez le sportif de force). La whey est simplement pratique : autour de l'entraînement, en collation, ou pour compléter un repas pauvre en protéines. Comptez 20 à 30 g par prise.

Whey, prise de muscle et perte de poids
La whey n'est pas « réservée à la masse ». En prise de muscle, elle sécurise l'apport protéique nécessaire à la construction. En perte de poids, sa richesse en protéines et son pouvoir rassasiant aident à préserver le muscle et à limiter les fringales pendant un déficit calorique. C'est le même produit, au service de deux objectifs.
Whey : y a-t-il des dangers ?
Pour une personne en bonne santé, non : c'est une protéine de lait consommée aux doses usuelles. Les seuls désagréments possibles sont digestifs (le lactose d'une concentrée) et se règlent avec une isolate ou une protéine végétale. Aucune donnée sérieuse ne montre de danger d'un apport protéique élevé sur des reins sains. On détaille tout dans whey et dangers.
